The project is an integral part of the “1 for Humanity – 9 for Nature” program, an initiative aimed at minimizing ecological footprints while promoting biodiversity.

This innovative program dedicates a significant portion of the plantation’s land to natural preservation, ensuring a balance between agricultural production and environmental protection.

Ancestral Expertise, How to make Exceptional Coffee Process Explained

The coffee production at La Merecida stands out for its artisanal approach. Every step of the process, from planting to harvesting, is carried out with care and love.

When the coffee cherries reach full maturity, typically between September and December, then again between April and June, they are hand-picked, a gesture that ensures the quality and purity of the beans.

Once harvested, the coffee beans are delicately depulped using traditional machinery, then soaked in water for 24-hour to remove all traces of pulp.

This natural process preserves the beans’ organoleptic qualities, allowing them to fully develop their characteristic aromas.

Next, the beans are carefully spread out to dry slowly in the sun, a process that can take several days.

Sun drying is an eco-friendly method, using only natural energy to prepare the beans for the next stage. Once dry, each bean is sorted and selected by hand, one by one, ensuring only the best make it to the roasting stage.

Damaged beans are systematically discarded, guaranteeing a final product of impeccable quality.

Meet Local Coffee Farmers: Their Stories and Traditions

Roasting the coffee beans is a crucial step in unlocking their full complexity of flavors.

At La Merecida, you have two options for roasting our coffee: either it is roasted and sold directly on site or it is shipped in green beans to Europe through our partner Belco. This flexibility allows us to guarantee optimum freshness and quality throughout the process.

In Colombia, we are doing this step in collaboration with the Centro de Innovación Cafetero Del Caribe, based in Santa Marta.

Thanks to this partnership, the beans are roasted progressively, reaching an optimal temperature of 180 degrees before being naturally cooled. This slow and controlled roasting process allows the unique characteristics of the beans to be fully expressed while preserving their integrity.

The beans are then sorted into three categories based on their size: 17, 15, and 13. This meticulous classification ensures homogeneity in the final product, with each category offering a slightly different tasting experience.

Once roasting is complete, the beans are carefully packaged to preserve all their freshness and flavor, ready to be shipped to coffee lovers around the world.
